Makes approx. 12 large muffins
1 cup ground almonds/walnuts/flaxseed
2 cups ground oats
1 tsp baking powder
1 tsp bicarb soda
1 tsp cinnamon
3 cups grated green apple
2/3 cup apple juice (from grated apple)
Grind the oats and nuts/seeds into a fine meal. Combine in a bowl with the baking powder, bicarb and cinnamon. Peel and grate enough green apples to make 3 cups of grated apple (squeeze most of the juice out before you measure). Mix the grated apple into the bowl of dry ingredients (save the juice to add later). Blend the eggs, dates and apple juice until the dates are pureed. Add more apple juice if needed. Pour the blended ingredients into the dry ingredients and mix thoroughly (add more apple juice or water if needed to make a nice batter consistency).
Grease the muffin tin and bake at 170 degrees Celsius for around 20min (don’t forget to preheat the oven while you are getting the ingredient prepared!).
This is slightly more time consuming than most of my other recipes, so I always cook a double batch and then freeze the left overs!
