Jaffa ‘Cheesecake’

Crust
– 1 1/2 cups ground almonds
– 130g dates
– 1Tbs cacao/cocoa
– 1tsp orange zest
– water
Grind the almonds to a fine meal. Puree the dates with a little water. Blend all of the ingredients together and add just enough water to form a sticky dough. Press into a lined 20cm circular cake tin.

Filling
– 2 cups of cashews (280g)
– 140g dates
– 1/2 cup cacao/cocoa
– 2 Tbs brandy (cointreau might also be nice!)
– 1/3 cup coconut oil
– Zest of 3 oranges
– 1 cup of fresh orange juice (approx 3 oranges)
Grind the cashews into a meal and set aside. Blend all other ingredients into a paste. Add in the cashew meal and blend thoroughly. Pour into the tin over the crust and place in the freezer for around 4 hours to set.
