Laksa Style Soup


Laksa Style Soup (Tofu or Prawn)

2 onions
1 large red capsicum
1 Tbs ginger
1 clove garlic
3 Tbs curry paste
1 large veggie stock cube
2 Tbs soy sauce
3 Tbs mango purée
2 1/2 – 3 Tbs lime juice (1 lime)
1 cup light coconut milk
3 cups water
4 potatoes
2 bunches baby bok choy
Coconut oil for cooking
EITHER 450g firm tofu OR 300-400g peeled prawns

Brown chopped capsicum, onions, garlic and ginger in coconut oil. Add curry paste and cook for 1-2mins. Add everything other than bok choy leaves and prawns (if using tofu chop it into small strips and add). Cook for approx. 45-60mins. Then add prawns and bok choy leaves and simmer until prawns are cooked.
