Mexican Chocolate

 

Mexican Chocolate Chili Curry

2 cloves garlic
2 onions
2 small-med red capsicums
1 Tbs mild chili flakes
1 tsp ground cumin
2 tsp ground coriander
2 tsp dry oregano
1/2 tsp cinnamon
1 large veggie stock cube
1 can tinned tomatoes
2 Tbs cacao
2 Tbs mango puree
1 cup water
500g sweet potato
2 large zucchini
EITHER 2 cans (drained) of kidney beans or black beans OR 4-6 organic chicken drumsticks

Chop the onion, garlic and capsicum and brown in olive oil. Add the spices and cook for approx. 60sec. Add tinned tomatoes, stock cube, water, cacao, mango purée, chopped sweet potato and zucchini, and protein of choice. Simmer for at least an hour.
