Nonna’s Goulash

(serves approx. family of four)

2 large brown onions
1 Tbs cold-pressed olive oil
2 tsp sweet Hungarian paprika
140g tub of tomato paste
500g lean beef mince
1 chicken breast

Chop the onions finely and cut the chicken into pieces (approx. 1.5cm squares). Brown the chopped onions in olive oil in a pot. Add the mince and the chicken pieces. Once the meat has also browned, add the sweet Hungarian paprika and the tomato paste. Add boiling water (from the kettle) until everything in the pot is just covered. Place a lid on the pot and simmer on low heat for 45-60 minutes. Add salt and pepper to taste.


This was always served over some homemade pasta with some fresh salad. Now however, I would have her goulash poured over some lightly steamed green beans or zucchini noodles.
