3/4 cup rolled oats
3/4 tsp baking powder
1/2 tsp cinnamon
3/4 cup blueberries
Grind the oats into a flour. Blend the banana, oats, egg, cinnamon and baking powder together. Let the mixture sit for about 10min to thicken slightly. Mix in the blueberries (make sure they are defrosted if you are using frozen blueberries). Heat a non-stick pan on low heat. I put a tiny amount of coconut oil in the pan to stop the pancakes from sticking.
I pureed up some cooked pear to use as a ‘syrup’ for the pancakes, however the pancakes were quite moist and sweet and didn’t really need the addition of the ‘pear syrup’.
