Peanut Butter Brownies



2 cups walnuts
2.5 cups dates (320g)
1 cup cacao
1/4 tsp Himalayan salt
3/4 cup coconut oil
3 Tbs natural peanut butter

To make the brownie base:
Roughly grind the walnuts. Puree all of the dates with just over 1/2 a cup of water. Set aside 3 Tbs of the date puree in a bowl for the topping. Combine the walnuts, cacao, remaining date puree, and salt with 1/2 cup of melted coconut oil (the rest is for the topping). Press into a tray lined with baking paper.

To make the topping:
Combine the 3 Tbs of date puree with 3 Tbs of natural peanut butter and 1/4 cup of melted coconut oil. Mix thoroughly and spread over the top of the brownie. Leave in the fridge to set.
