Pumpkin Muffins

mini muffins

Makes around 12 large muffins (mini muffins pictured)

Ingredients

– 450g cooked pumpkin puree
– 2 cups ground oats
– 1 cup ground almonds
– 4 eggs
– 1/3 cup apple puree
– 1/2 tsp cinnamon
– 1/4 tsp nutmeg
– 1 tsp baking powder
– 1 tsp baking soda
 

Method
Lightly oil the muffin trays and cook at 160deg Celsius. The mini muffins take around 20min and the larger muffins take around 25mins. I doubled this mix and made 24 large muffins (2 trays) and a whole tray of mini muffins (yum!).
