Sweet Potato, Oat & Raisin Cookies

Ingredients

650g Sweet potato (raw weight)
2 1/2 cups oats
1 1/2 cups shredded coconut
1 tsp baking powder
120g dried dates

1/4 cup coconut oil
1/4 cup water
3/4 tsp vanilla essence
3/4 cup raisins

Method

Peel and cook the sweet potato. Combine the cooked sweet potato, vanilla essence, coconut oil, water and dates, and puree. Combine the oats, coconut, baking powder and raisins in a mixing bowl. Add the pureed wet ingredients and mix through.

Grease the baking tray and shape the dough into small discs. Bake at 175 degrees Celsius for around 35min (don’t forget to preheat the oven while you are getting the ingredient prepared!).
