Sweet Potato Patties

Makes approx. 12 patties


500g sweet potato (raw weight)
1/2 cup brown rice (raw)
1 1/2 cups frozen peas
1/3 cup oats or quinoa flakes
1 egg

1 clove of garlic (or ginger if you prefer)
1 1/2 tsp ground cumin
2 Tbs fresh chopped parsley
Salt and pepper to taste


Cook the brown rice with 1 cup of water. Peel and cook the sweet potato. Mash the cooked sweet potato in a bowl, then add the cooked rice, frozen peas, oats/quinoa flakes, cumin, salt and pepper. Mix thoroughly. Finely slice the garlic (or ginger) and parsley, and add them to the mix. Whisk the egg in a small bowl, then add to the mix (make sure the mixture isn’t too hot when you add the egg). Mix thoroughly then mold the mixture into patties (makes approx. 12 patties).

Cook in a non-stick pan (you may need to spray or lightly wipe over with olive oil) on low to medium heat for around 3 minutes each side. They are a little bit more crumbly than a traditional pattie, but they should hold their shape reasonably well once cooked. Eat as a snack on their own, with some steamed vegetables, or as a tasty vegetable side dish.
