Vanilla Protein Balls

Vanilla protein balls

1 cup vanilla pea protein (or whey protein)
1 cup walnuts
1/2 cup sunflower seeds
1/2 cup flaxseeds
1/2 cup cashews
1/4 cup almonds
100g dried dates
1 tsp vanilla essence
1 cup water
Golden flaxseed meal (to roll balls in)

Finely grind all nuts and seeds. Purée the dates with some of the water. Combine the protein powder and ground nuts (except for the golden flaxseed meal). Add the date purée and the rest of the water. Mix until there is a thick sticky dough (add more water if needed). Roll into balls and lightly coat with the golden flaxseed meal. Can be frozen if desired.
