Veggie Bake

250g sweet potato
400g zucchini
1 small leek
1 small clove of garlic
2 cups oat flour (rolled oats can be used)
6 eggs
3/4 tsp bicarb soda
3/4 tsp baking powder
salt & pepper
shredded tasty cheese (optional)

Finely grate the zucchini and sweet potato into a bowel (peeling isn’t necessary). Finely chop the leek and garlic and add to the bowl. Grind rolled oats into a flour. Add two cups of this flour to the bowl, along with the bicarb, baking soda, salt and pepper (to taste), and thyme and parsley (liberal amounts). Crack six eggs into a new bowl. Beat together and then add to the rest of the mix. Lightly grease the baking tray with oil. Pour the mixture into the tray and flatten with a spoon. Shredded tasty cheese can be sprinkled over the top if you wish. Bake on 160 degrees Celsius for 45 minutes.
