Veggie Loaf

500g firm organic tofu
1/2 cup walnuts
2 carrots
3 celery stalks
5 Tbs tinned tomatoes
2 Tbs tomato paste
1 cup rolled oats
1/2 cup spelt flour
1 1/2 cups chickpeas/mixed bean
1 onion (or leek)
1 tsp oregano
1 tsp basil
1 tsp thyme
5 tsp parsley
1/2 tsp sweet Hungarian paprika

Brown the chopped onion and celery in some olive oil. Combine in a bowl with the oats, flour and spices. Place the remaining ingredients into a food processor and blend. Combine all ingredients. Press into a baking tray either oiled or lined with baking paper. You could add cheese to the top if you wish. Bake at 190 deg Celsius for approx. 45mins. Remove from tray and place on a cooling rack.
